Ingredients
For the venison:
- 2 venison loin steaks (approx. 180g / 6 oz each)
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Sea salt and black pepper to taste
- 1 tablespoon butter (for basting)
For the butter greens:
- 200g (4 large handfuls) kale or spinach, roughly chopped
- 1 tablespoon butter or ghee
- 2 garlic cloves, thinly sliced
- Pinch of sea salt
- Squeeze of lemon juice (optional)
Instructions

Bring the venison to room temperature: Remove the loin from the fridge 20–30 minutes before cooking. Pat completely dry with paper towel.

Make the herb crust: Combine rosemary, thyme, minced garlic, olive oil, salt, and pepper in a small bowl. Rub thoroughly over both sides of the venison loin.

Sear the venison: Heat a heavy skillet (cast iron works best) over high heat until very hot. Add the venison and sear for 2–3 minutes per side for medium-rare — venison is very lean and overcooks quickly, so avoid going past medium.

Baste and rest: In the final minute, add the tablespoon of butter to the pan and spoon the melted butter over the venison as it finishes. Remove from the pan and rest for 5 minutes before slicing.

Cook the greens: In the same pan, melt butter or ghee over medium heat. Add sliced garlic and cook for 30 seconds until fragrant. Add the greens in batches, stirring to wilt, about 3–4 minutes total. Season with sea salt and a squeeze of lemon if using.

Plate and serve: Slice the venison against the grain and serve over the butter greens, spooning any resting juices over the top.
