Kabab Soltani is the ideal OMAD meal in Iranian cuisine — one plate carrying roughly 55 g of protein and almost no carbohydrate. "Soltani" simply means one skewer of Barg (fillet) plus one of Koobideh (minced meat), and both are pure protein and fat with no flour, sugar or starch anywhere.
That combination is genuinely useful for a faster. Lean fillet delivers the amino acids that protect muscle during fasting, while the fattier koobideh supplies the satiety that stops you snacking later. Ingredients
For the Barg skewer
- 350 g beef tenderloin or lamb fillet, sliced thin
- 1 tbsp onion juice
- ¼ tsp ground saffron in 2 tbsp hot water
- 1 tbsp lemon juice, 2 tbsp olive oil
For the Koobideh skewer
- 350 g minced lamb or beef (20% fat)
- 1 onion, grated and squeezed dry
- ½ tsp salt, ¼ tsp pepper, ¼ tsp turmeric
To serve
- 4 tomatoes, 2 tbsp butter, sumac, fresh herbs
Method
- Marinate the Barg. Combine the fillet with onion juice, saffron, lemon and olive oil. Refrigerate 4–12 hours.
- Knead the Koobideh. Mix minced meat with grated onion and spices, knead 5–10 minutes until sticky, then chill 30 minutes.
- Shape. Press koobideh firmly onto flat skewers; thread the barg strips lengthways on separate skewers.
- Grill the koobideh first — 12–15 minutes over high heat, turning once.
- Grill the barg last — 3–4 minutes per side only. It cooks much faster.
- Grill the tomatoes alongside until blistered.
- Baste both with saffron butter and serve one of each per person with sumac and herbs. No rice.
