Ingredients
Chicken:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons butter, softened
- 4 garlic cloves, minced
- 1 teaspoon fresh thyme leaves (or ½ tsp dried)
- 1 teaspoon fresh rosemary, finely chopped (or ½ tsp dried)
- Sea salt and black pepper
- 1 tablespoon olive oil
Cauliflower Mash:
- 1 medium head cauliflower, cut into florets
- 3 tablespoons butter
- 3 tablespoons heavy cream
- Sea salt and white pepper
- Pinch of nutmeg (optional)
Greens:
- 200g (7 oz) spinach or kale
- 2 garlic cloves, thinly sliced
- 1 tablespoon butter or olive oil
- Sea salt and black pepper
Instructions

Preheat your oven to 220°C / 425°F. Pat the chicken thighs completely dry with paper towels — this is the single most important step for crispy skin.

Make the herb butter. Mix the softened butter with minced garlic, thyme, rosemary, salt, and pepper. Using your fingers, loosen the skin on each thigh and push a generous amount of herb butter directly underneath.

Season the outside. Rub the skin with olive oil, then season with salt and pepper.

Roast the chicken. Place thighs skin-side up on a baking rack set over a roasting tray. Roast for 40–45 minutes until the skin is deep golden and crispy and the internal temperature reads 75°C / 165°F. Rest for 5 minutes before serving.

Cook the cauliflower. While the chicken roasts, steam or boil cauliflower florets until very tender, about 12–15 minutes. Drain thoroughly and press out as much excess water as possible — this is what gives a creamy mash.

Make the mash. Blend or process the drained cauliflower with butter and cream until smooth. Season with salt, white pepper, and optional nutmeg. Keep warm.

Sauté the greens. Heat butter or olive oil in a large pan over medium heat. Add the sliced garlic and cook for 1 minute until fragrant. Add greens and toss until wilted — 2–3 minutes for spinach, 5–6 minutes for kale. Season with salt and pepper.

Plate up. Divide cauliflower mash between plates, arrange greens alongside, and top with 2 chicken thighs per serving.
