Ingredients
- 2 swordfish steaks (about 180g / 6oz each)
- Sea salt and black pepper, to taste
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 2 cloves garlic, minced
- 1 lemon, juiced (about 3 tbsp)
- 2 tbsp capers, drained
- 2 tbsp fresh parsley, chopped
- Lemon slices, for garnish
Instructions
- Pat the swordfish steaks dry with paper towel and season both sides generously with salt and pepper.
- Heat the olive oil and 1 tbsp of butter in a large skillet over medium-high heat until shimmering.
- Add the swordfish steaks and sear for 3–4 minutes per side, until golden brown and just cooked through (internal temperature of 130–135°F). Remove from the pan and set aside, tented with foil.
- Reduce heat to medium. Add the remaining 2 tbsp of butter to the same skillet and let it melt.
- Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly so it doesn't burn.
- Pour in the lemon juice and add the capers. Simmer for 1–2 minutes, scraping up any browned bits from the pan.
- Stir in the chopped parsley, then spoon the sauce generously over the swordfish steaks.
- Garnish with lemon slices and serve immediately.
