Ingredients

  • 2 cups pitted green olives, roughly chopped
  • 1 cup walnuts, finely chopped or ground
  • 3 tbsp pomegranate paste (rob-e anar)
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh mint (or 1 tbsp dried)
  • 2 tbsp olive oil
  • 1 tbsp golpar (Persian hogweed), optional
  • Pomegranate seeds, to garnish

Method

  1. Grind the walnuts. Chop or pulse the walnuts to a coarse meal.
  2. Make the paste. Mix walnuts, pomegranate paste, garlic, mint, olive oil, and golpar into a thick, dark paste.
  3. Fold in olives. Stir in the chopped olives until fully coated.
  4. Rest. Cover and refrigerate at least a few hours, ideally overnight, so the flavours marry.
  5. Garnish with pomegranate seeds before serving.
  6. Serve a small portion as a rich, fat-forward way to open your eating window.
