Ingredients
- 300g chicken livers, trimmed
- 4 slices bacon, chopped
- 1 tablespoon butter or ghee
- 4 cups mixed salad greens (rocket, spinach, or a mix)
- 1/2 small red onion, thinly sliced
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Pat the chicken livers dry and season generously with salt and pepper.
- Heat a large skillet over medium-high heat and cook the chopped bacon until crisp. Remove with a slotted spoon and set aside, leaving the fat in the pan.
- Add the butter to the bacon fat in the pan. Once hot, add the chicken livers in a single layer and sear for 2–3 minutes per side, until browned outside and just pink in the center. Do not overcrowd the pan — cook in batches if needed.
- Remove the livers and let rest for 2 minutes, then slice into bite-sized pieces.
- In a small bowl, whisk together the red wine vinegar, olive oil, and Dijon mustard to make the dressing.
- Toss the salad greens and red onion with the dressing, then top with the warm sliced livers and crispy bacon.
- Serve immediately while the liver and bacon are still warm.
