Ingredients

  • 2 swordfish steaks (approximately 180g / 6oz each)
  • 2 tablespoons olive oil, divided
  • 1 lemon (zest + juice)
  • Sea salt and black pepper to taste
  • 4 cups mixed salad greens (arugula, spinach, or romaine)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup pitted Kalamata olives
  • 1 tablespoon capers, drained
  • 1 garlic clove
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Make the tapenade first: pulse the Kalamata olives, capers, garlic clove, 1 tablespoon olive oil, and parsley in a food processor until finely chopped but not fully smooth. Set aside.
  2. Pat the swordfish steaks dry and rub with the remaining tablespoon of olive oil. Season generously with sea salt, black pepper, and the lemon zest.
  3. Heat a grill pan or outdoor grill to medium-high heat.
  4. Grill the swordfish for 4–5 minutes per side, until it reaches an internal temperature of 63°C (145°F) and flakes easily with a fork. Avoid overcooking, as swordfish dries out quickly.
  5. While the fish rests for 2–3 minutes, arrange the mixed greens, cherry tomatoes, and red onion on two plates.
  6. Slice the swordfish and place on top of the salad.
  7. Spoon the olive tapenade generously over the fish and salad.
  8. Finish with a squeeze of fresh lemon juice over everything just before serving.
