Ingredients
- 120g (about 4 cups) plain pork rinds (chicharrones)
- 200g (1½ cups) shredded cheddar or Mexican-blend cheese
- 2 ripe avocados
- 1 tbsp fresh lime juice
- 2 tbsp finely diced red onion
- 2 tbsp chopped fresh cilantro
- 1 small tomato, diced
- 1 small jalapeño, finely diced (seeds removed for less heat)
- ¼ tsp salt, plus more to taste
- 60ml (¼ cup) sour cream
- 60ml (¼ cup) salsa (sugar-free or low-carb)
- 1 tbsp sliced pickled jalapeños, for topping (optional)
Instructions

Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.

Make the guacamole: mash the avocados in a bowl, then stir in the lime juice, red onion, cilantro, diced tomato, jalapeño, and ¼ tsp salt. Taste and adjust seasoning.

Spread the pork rinds in a single, slightly overlapping layer on the baking sheet.

Scatter the shredded cheese evenly over the pork rinds.

Bake for 5–7 minutes, watching closely, until the cheese is fully melted and just starting to bubble.

Remove from the oven and immediately top with dollops of guacamole, sour cream, and salsa.
