Ingredients
- 6 large eggs
- 3 oz (85g) smoked salmon, finely chopped
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp fresh lemon juice
- 1 tbsp fresh dill, finely chopped, plus extra for garnish
- 1 tbsp capers, drained and roughly chopped
- Salt and black pepper, to taste
- Smoked paprika, for garnish
Instructions
- Place the eggs in a single layer in a saucepan and cover with cold water by about 1 inch. Bring to a boil, then remove from heat, cover, and let sit for 11 minutes.
- Transfer the eggs to an ice bath and let cool for 5 minutes, then peel.
- Slice each egg in half lengthwise and gently scoop the yolks into a mixing bowl, keeping the whites intact.
- Mash the yolks with a fork, then stir in the mayonnaise, Dijon mustard, and lemon juice until smooth.
- Fold in the chopped smoked salmon, dill, and capers. Season with salt and pepper to taste.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with a light dusting of smoked paprika and a small sprig of dill before serving.
