Ingredients

  • 200g (7 oz) smoked trout fillets, skin removed, flaked
  • 115g (4 oz) full-fat cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, finely chopped (plus extra to garnish)
  • 1 tablespoon capers, drained
  • 2 tablespoons finely sliced red onion
  • ¼ teaspoon black pepper
  • 1 small head butter lettuce or 8 large romaine leaves, washed and separated
  • ½ small cucumber, thinly sliced (optional, for crunch)

Instructions

  1. In a mixing bowl, whip the softened cream cheese with the lemon juice and dill until smooth and light.

  2. Gently fold in the flaked smoked trout, capers, red onion, and black pepper. Mix just enough to combine — you want visible flakes of trout, not a paste.
