Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the halved tomatoes with 1 tablespoon of olive oil, the garlic, oregano, red pepper flakes, a pinch of salt, and black pepper. Spread in a single layer, cut side up.
- Roast for 18–20 minutes, until the tomatoes are blistered and slightly collapsed and the garlic is golden. Let cool for 2–3 minutes.
- While the tomatoes roast, divide the cottage cheese between two bowls and drizzle each with the remaining olive oil.
- Spoon the warm roasted tomatoes and their juices over the cottage cheese.
