Steak and Egg Breakfast Bowl with Avocado

Why This Works for Intermittent Fasting

This bowl leans almost entirely on protein and healthy fat, with the seared steak and eggs supplying a heavy dose of amino acids while the avocado's monounsaturated fat slows digestion and stretches satiety for hours. As the first meal after a fasting window, it delivers steady, sustained energy without the carb load that would spike insulin or invite an afternoon crash. It's a compact, nutrient-dense way to break a fast and immediately set the tone for a stable eating window.

Ingredients

  • 10 oz (280g) sirloin or ribeye steak, room temperature
  • 4 large eggs
  • 1 ripe avocado, sliced
  • 1 tablespoon butter or ghee, divided
  • 1 tablespoon olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • ½ teaspoon garlic powder (optional)
  • 1 tablespoon fresh chives or cilantro, chopped (optional)
  • Hot sauce or salsa, to serve (optional)
  • Lime wedge, to serve (optional)

Instructions

  1. Pat the steak dry with paper towels and season generously on both sides with sea salt, pepper, and garlic powder if using.
  2. Heat the olive oil in a heavy skillet over high heat until shimmering. Sear the steak for 3–4 minutes per side for medium-rare, or longer to your preferred doneness.
  3. Add half the butter to the pan during the last minute of cooking, tilting the pan to baste the steak. Transfer to a cutting board and let it rest for 5 minutes before slicing against the grain.
  4. While the steak rests, whisk the eggs in a bowl with a pinch of salt.
  5. Wipe out the skillet, reduce heat to low-medium, and melt the remaining butter. Pour in the eggs and cook slowly, stirring gently and frequently, for 3–4 minutes until soft-scrambled and just set.
  6. Divide the sliced steak and eggs between two bowls. Fan the avocado slices alongside.
  7. Season with a final crack of black pepper, scatter with chives or cilantro, and serve with hot sauce, salsa, or a lime wedge if desired.
