Ceviche is nearly pure lean protein with almost no carbohydrate, making it an ideal way to break a fast without a heavy insulin spike or bloated feeling. The high water content of the sea bass and cucumber also supports rehydration after a fasting window, while the citrus "cooking" method keeps the fish light and easy to digest — a good match for a stomach that has been empty for several hours.

Ingredients

  • 300g sushi-grade sea bass fillet, skin removed, diced small
  • Juice of 4 limes (about 120ml)
  • 1/2 small red onion, very thinly sliced
  • 1/2 cucumber, deseeded and finely diced
  • 1 small red chilli, deseeded and finely chopped
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp extra virgin olive oil
  • Sea salt, to taste
  • Optional: avocado slices, to serve

Instructions

  1. Place the diced sea bass in a non-reactive glass or ceramic bowl.
  2. Pour the lime juice over the fish, making sure all pieces are submerged. Cover and refrigerate for 25–30 minutes, until the fish turns opaque and firm — this is the citrus "curing" the fish.
  3. While the fish cures, prepare the red onion, cucumber, chilli, and coriander.
  4. Once cured, drain most of the excess lime juice from the fish, leaving a couple of tablespoons behind.
  5. Gently fold in the red onion, cucumber, chilli, and coriander.
  6. Drizzle with olive oil and season with sea salt to taste.
  7. Serve immediately in chilled bowls, topped with avocado slices if using.
