Ingredients
For the kebabs:
- 700g lamb mince (ideally 20% fat — keeps the kebabs moist)
- 3 cloves garlic, finely grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp smoked paprika
- ½ tsp ground cinnamon
- ½ tsp sea salt
- ¼ tsp black pepper
- ¼ tsp chilli flakes (optional)
- 2 tbsp fresh parsley, finely chopped

- 1 small cucumber, sliced

Mix the kebab mixture. Combine the lamb mince, grated garlic, cumin, coriander, paprika, cinnamon, salt, pepper, chilli flakes, and chopped parsley in a large bowl. Mix thoroughly with your hands for about 2 minutes — the more you work the mixture, the better it binds and holds on the skewer.

Shape the kebabs. Divide the mixture into 8 equal portions. Shape each portion into a long sausage shape around a flat metal skewer (or form into oblong patties if using a grill pan without skewers). Press firmly so the meat clings to the skewer. Refrigerate for 10 minutes if time allows — this helps them hold their shape during cooking.
