Ingredients
For the salmon:
- 2 salmon fillets, skin-on (about 170g / 6oz each)
- 1 tablespoon olive oil
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon butter
- 1 clove garlic, lightly crushed
- 1 sprig fresh thyme
For the cauliflower puree:
- 1 medium head cauliflower, cut into florets (about 500g)

- 3 tablespoons double cream (heavy cream)
- 1 clove garlic, minced
- Sea salt and white pepper, to taste
- 1 tablespoon chopped chives, for garnish
Instructions
- Steam or boil the cauliflower florets until very tender, about 10-12 minutes. Drain thoroughly and let steam off for a minute or two to remove excess moisture.
- Transfer the cauliflower to a food processor with 3 tablespoons butter, the cream, and minced garlic. Blend until completely smooth. Season with salt and white pepper. Keep warm.
- Pat the salmon fillets completely dry with paper towel, especially the skin — this is essential for crisping. Season both sides generously with salt and pepper.
- Heat olive oil in a heavy-bottomed skillet over medium-high heat until shimmering. Lay the salmon skin-side down and press gently with a spatula for the first 30 seconds to prevent curling.
- Cook undisturbed for 5-6 minutes, until the skin is deeply golden and crisp and you can see the flesh turning opaque about two-thirds of the way up.
- Flip the salmon, add the butter, crushed garlic, and thyme to the pan. Tilt the pan and spoon the foaming butter over the fillets for 1-2 minutes, until just cooked through.
- Spoon the warm cauliflower puree onto plates, top with the crispy skin salmon, and garnish with chopped chives.
