Because this dish is essentially zero-carb, it keeps insulin low and blood sugar stable, which helps extend satiety well into your fasting window. It's an efficient way to get serious nutrition into a single meal without needing a large volume of food.

Ingredients

  • 200g beef liver, thinly sliced
  • 4 large eggs
  • 2 tbsp butter or ghee, divided
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • Sea salt and black pepper, to taste
  • Optional: a splash of full-fat cream for softer eggs

Instructions

  1. Pat the beef liver slices dry with paper towel and season both sides with salt and pepper.
  2. Melt 1 tablespoon of butter in a skillet over medium-high heat. Add the onion and cook for 2–3 minutes until softened.
  3. Add the garlic and cook for 30 seconds until fragrant.
  4. Add the liver slices to the skillet and sear for about 90 seconds per side — liver is best slightly pink in the center, as overcooking makes it tough. Remove from the pan and set aside.
  5. Whisk the eggs in a bowl with a pinch of salt (and cream, if using).
  6. Lower the heat, melt the remaining butter in the same skillet, and pour in the eggs. Stir gently and continuously for soft, fluffy curds.
  7. Roughly chop the seared liver and fold it back into the eggs just before they finish cooking.
  8. Remove from heat, stir through the parsley and thyme, and serve immediately.
